The Late Nighter was born out of one of those late-night cravings that turn into something special. One night, my wife and I found ourselves rummaging through the kitchen for a midnight snack, and with a handful of ingredients—sweet potato fries, some creamy goat cheese, a bit of blue cheese, and some fresh arugula—we ended up creating a sandwich that quickly became a favorite.

The Late Nighter starts with sweet potato fries tossed in a creamy goat cheese and topped with a sprinkle of blue cheese crumbles for a little extra bite.
