The Belly Bao is a mango ginger pork belly bao that’s close to my heart, and it’s one of those rare recipes that turned out just right from the very first try. Growing up in Queens, especially around Flushing,
I was surrounded by the incredible flavors of the local Chinese community. Flushing is a place where you can find all sorts of hidden culinary gems—little basement spots and cozy eateries serving up amazing Asian cuisine.
Over the years, I’ve tasted my share of fluffy, flavorful steamed buns filled with all kinds of deliciousness. So, the Belly Bao is my homage to that rich Chinese heritage in Queens. It’s a soft, pillowy bao bun filled with succulent pork belly that’s been glazed with a mango ginger sauce. The combination of the sweet mango, the warmth of ginger, and the savory richness of pork belly just hits all the right notes.
