The Shelly is a special sandwich that’s all about family and friendship. It’s inspired by our dear friend Shelly, who is Korean and whose kids went to daycare with ours. In fact, our oldest son’s daycare class was the start of a really tight-knit group of families.

We became close friends with Shelly’s family and a few others, going on vacations together and sharing a lot of meals and memories. Shelly used to make these amazing Korean barbecue sliders that all the kids absolutely loved. They’d disappear the moment she served them. When I started doing food festivals, I asked Shelly if we could feature her slider, and she not only agreed but also joined us to help cook at our very first event.

So, the Shelly is a Korean barbecue slider topped with a Korean chili flake slaw and a gochujang mayo. It’s more than just a sandwich—it’s a tribute to the Yi family and all those wonderful times we’ve shared together. It’s a little piece of our friendship and a whole lot of flavor.
